  • ¼ cup grated Parmesan cheese​
  • 1 tablespoon dried basil (or 3 tablespoons fresh, chopped)​
  • 2 large eggs​
  • 1 cup buttermilk (or milk)​
  • ¼ cup butter, melted​

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan.​
  2. Place the grated zucchini in a colander, sprinkle with a pinch of salt, and let it drain for about 10 minutes. Then, gently squeeze out any excess moisture.​
