Vegan Baked Feta Pasta

This dish is perfect for busy weeknights, low-effort dinners, or impressing your non-vegan friends with how easy and indulgent plant-based eating can be. It’s a one-pan, fuss-free recipe that makes the oven do all the work. With just a handful of fresh ingredients like cherry tomatoes, garlic, olive oil, and vegan feta, you’ll have a restaurant-quality meal in under an hour.

What Makes This Vegan Baked Feta Pasta So Special?

It’s the creamy, tangy, umami-rich sauce that makes this dish irresistible. When baked, the vegan feta turns lusciously soft, while the tomatoes roast to bursting sweetness. The garlic mellows out and infuses everything with deep, savory flavor. Once mashed and stirred into your favorite pasta, it becomes an effortlessly creamy sauce that clings to every bite.

Plus, this recipe is super versatile. You can easily make it gluten-free by choosing GF pasta, toss in spinach or kale at the end for added greens, or spice it up with red pepper flakes.

Vegan Feta Options That Work Best

If you’re wondering what type of vegan feta to use, look for coconut oil-based blocks found in most health food stores or specialty aisles. Brands like Violife or Trader Joe’s vegan feta-style cheese work really well. They hold their shape while baking and melt into that signature creamy texture when stirred.

Tips for the Perfect Baked Vegan Feta Pasta

  • Don’t skip the oil: Olive oil helps with roasting and bringing out flavor.
  • Use ripe cherry tomatoes: The sweeter, the better – they’ll caramelize beautifully.
  • Fresh basil makes a difference: Add it at the end for a burst of herbal brightness.
  • Want extra protein? Toss in cooked lentils, chickpeas, or vegan sausage before serving.
