Ingredients
  

  • For the Brownie Layer:
  • 1 cup all-purpose flour or gluten-free blend
  • 1/2 cup cocoa powder
  • 1 tsp baking powder
  • 1 cup sugar brown or coconut
  • 1/2 cup melted vegan butter or coconut oil
  • 1/2 cup plant-based milk
  • 1/2 cup dark chocolate chips
  • For the Banana Pudding Layer:
  • 2 ripe bananas mashed
  • 2 tbsp cornstarch or arrowroot powder
  • 2 cups coconut milk or oat milk
  • 1 tsp vanilla extract
  • 1/4 cup maple syrup or agave

Method
 

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease or line a square baking pan with parchment paper.
  2. Make the Brownie Batter:
  3. In a mixing bowl, whisk together the dry ingredients: flour, cocoa powder, baking powder, and sugar. In a separate bowl, combine the wet ingredients: melted butter, milk, and chocolate chips. Stir the wet ingredients into the dry mix until smooth. Pour the batter into the prepared pan.
  4. Bake the Brownie Base: Bake for 18–20 minutes or until the top is set but the center is slightly underdone.
  5. Prepare the Banana Pudding:
  6. While the brownie is baking, prepare the banana pudding by heating the coconut milk and mashed bananas over medium heat. Stir in cornstarch and sweetener until the mixture thickens. Remove from heat and stir in vanilla extract.
  7. Layer the Pudding:
  8. Once the brownie base is slightly baked, remove it from the oven. Spread the banana pudding evenly over the brownie layer. Press vegan vanilla wafers into the pudding layer and add banana slices if desired. Return to the oven for another 10 minutes.
  9. Cool and Set:
  10. Let the dessert cool at room temperature, then refrigerate for 2–3 hours to set the pudding layer.

  12. Slice into squares and top with vegan whipped cream or extra banana slices.

Notes

Ripe bananas are key for the best flavor and texture in the pudding layer.
Chill the dessert fully before serving to ensure the pudding sets perfectly.
You can add peanut butter or caramel to the pudding layer for a richer flavor.
