Method
- Preheat oven to 350°F (175°C). Line a 9x13-inch baking pan with parchment paper.
- Make the crust: Cream butter and powdered sugar until smooth. Add flour and salt, mix until a dough forms.
- Press the dough evenly into the bottom of the prepared pan. Bake for 15 minutes or until lightly golden.
- While crust bakes, prepare the lime filling: Whisk eggs and sugar until well combined. Stir in flour, then lime juice, zest, and optional food coloring.
- Pour filling over the hot crust and return to the oven. Bake for 20–25 minutes until set.
- Let cool completely, then refrigerate for 1–2 hours before slicing. Dust with powdered sugar before serving.
Notes
Use freshly squeezed lime juice for best flavor.
Store in an airtight container in the fridge for up to 5 days.
You can substitute lemon juice for a lemon-lime version.
