Chia Seed Pudding with Berries

Ingredients
  

  • 1/4 cup chia seeds
  • 1 cup unsweetened plant milk almond, soy, oat, etc.
  • 1 tbsp maple syrup or preferred sweetener
  • 1/2 tsp vanilla extract
  • 1 pinch sea salt
  • 1 cup mixed fresh berries for topping

Equipment

  • Mason jar or lidded container
  • Measuring cups & spoons

Method
 

  1. In a jar, combine chia seeds, plant milk, maple syrup, vanilla, and a pinch of salt.
  2. Stir (or seal and shake) until seeds are evenly dispersed. Let stand 5 minutes and stir again to prevent clumping.
  3. Refrigerate at least 4 hours or overnight until thick and pudding-like.
  4. In the morning, stir; add a splash of milk if too thick. Top with fresh berries and enjoy.

Notes

Store pudding (sans toppings) up to 4–5 days chilled. Blend soaked pudding for a smooth texture or add 1 tbsp cocoa powder for a chocolate version.
