Ingredients
  

  • For the Cookie Dough:
  • 1 cup all-purpose flour or gluten-free flour blend
  • 1/4 cup unsweetened cocoa powder
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup dark chocolate chips
  • For the Molten Lava Center:
  • 4 oz dark chocolate chopped or broken into chunks
  • 1/4 cup heavy cream or coconut cream for a dairy-free option

Method
 

  1. Preheat the Oven:
  2. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  3. Prepare the Cookie Dough:
  4. In a large bowl, whisk together the flour, cocoa powder, baking powder, and salt. In a separate bowl, cream the softened butter with granulated sugar and brown sugar until light and fluffy. Beat in the egg and vanilla extract until fully incorporated. Gradually mix in the dry ingredients and chocolate chips. The dough should be thick and smooth.
  5. Prepare the Molten Lava Center:
  6. In a microwave-safe bowl, melt the dark chocolate with heavy cream (or coconut cream) in 20-second intervals, stirring each time, until smooth. Set aside to cool slightly.
  7. Form the Cookie Dough Balls:
  8. Scoop 1 tablespoon of dough and flatten it slightly in the palm of your hand. Place a teaspoon of the melted chocolate mixture in the center and cover with more dough. Seal the edges tightly so the molten chocolate stays inside.
  9. Bake the Cookies:
  10. Place the dough balls on the prepared baking sheet, leaving space between each cookie. Bake for 10-12 minutes, or until the edges are set but the centers are soft. Let them cool on the baking sheet for 5 minutes before transferring to a wire rack.
  11. Cool and Serve:
  12. Let the cookies cool for a few minutes to allow the molten chocolate center to set a little. Serve warm for the ultimate gooey experience.

Ensure the chocolate filling is sealed inside the dough to prevent it from leaking during baking.
