Ingredients
  

  • 1 cup plain vegan yogurt unsweetened
  • 1 tbsp fresh lemon juice
  • 1 tbsp olive oil
  • 1 clove garlic minced
  • 1 tsp maple syrup or agave nectar optional
  • 2 tbsp fresh dill or parsley finely chopped
  • salt and pepper to taste

Method
 

  1. In a bowl, whisk together the vegan yogurt, lemon juice, and olive oil until smooth.
  2. Add minced garlic and optional maple syrup, then stir well.
  3. Mix in chopped fresh dill or parsley.
  4. Season with salt and pepper to taste.
  5. Chill in the refrigerator for 10–15 minutes before serving for best flavor.

Notes

Store in the refrigerator in a sealed container for up to 4 days. Shake or stir before each use. This dressing pairs well with grain bowls, chopped salads, or as a sandwich spread.
