Method
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a bowl, whisk together flour, baking soda, and salt. Set aside.
- In a separate large bowl, cream butter and sugar until fluffy. Add egg and vanilla; mix well.
- Gradually add the dry ingredients and mix until combined.
- Divide the dough into 3 equal portions:
- - Leave one plain (vanilla).
- - Mix cocoa powder into one portion for chocolate.
- - Mix strawberry powder and food coloring into one portion for strawberry.
- Roll each dough portion into logs. Stack or layer the three logs together and gently press.
- Chill dough for 30 minutes, then slice into rounds.
- Bake for 10–12 minutes until edges are set. Cool completely.
- Sandwich two cookies together using ganache or frosting.
Notes
• You can flavor the filling with vanilla or strawberry extract for extra punch.
