Ingredients
  

  • 2 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • 2 tbsp cocoa powder
  • 2 tbsp freeze-dried strawberry powder
  • Red food coloring optional
  • Chocolate ganache or buttercream for filling

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, and salt. Set aside.
  3. In a separate large bowl, cream butter and sugar until fluffy. Add egg and vanilla; mix well.
  4. Gradually add the dry ingredients and mix until combined.
  5. Divide the dough into 3 equal portions:
  6. - Leave one plain (vanilla).
  7. - Mix cocoa powder into one portion for chocolate.
  8. - Mix strawberry powder and food coloring into one portion for strawberry.
  9. Roll each dough portion into logs. Stack or layer the three logs together and gently press.
  10. Chill dough for 30 minutes, then slice into rounds.
  11. Bake for 10–12 minutes until edges are set. Cool completely.
  12. Sandwich two cookies together using ganache or frosting.

Notes

• You can flavor the filling with vanilla or strawberry extract for extra punch.
• For an easier version, roll out each dough separately and cut with a cookie cutter.
