Peach Watermelon Salad

Ingredients
  

  • - 2 cups watermelon cubed
  • - 2 ripe peaches sliced
  • - 2 tbsp fresh mint chopped
  • - 1 tbsp lime juice about half a lime
  • - 1 tsp maple syrup optional, for extra sweetness
  • - Pinch of sea salt
  • - Optional 1/4 cup plant-based feta cheese, crumbled

Method
 

  1. In a large bowl, add cubed watermelon and sliced peaches.
  2. Sprinkle chopped mint over the fruit.
  3. Drizzle lime juice and maple syrup on top.
  4. Gently toss everything together to coat the fruit evenly.
  5. Sprinkle a pinch of sea salt and top with crumbled vegan feta if using.
  6. Chill in the refrigerator for 15–30 minutes before serving for best flavor.

Notes

- Add cucumbers or blueberries for extra texture and color.
- Serve in a hollowed-out watermelon for presentation.
- Best enjoyed fresh, can be stored in fridge for up to 1 day.
