Ingredients
  

  • 1 ½ cups grated zucchini don’t squeeze it dry!
  • 1 ripe banana mashed
  • ½ cup unsweetened applesauce
  • 2 large eggs
  • ¼ cup plain Greek yogurt
  • 1 tsp vanilla extract
  • 1 ½ cups whole wheat flour
  • ½ tsp baking soda
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp salt
  • Optional: ¼ cup chopped walnuts or dark chocolate chips sugar-free

Instructions
 

  • Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  • In a large bowl, whisk together mashed banana, applesauce, eggs, yogurt, and vanilla until smooth.
  • Stir in grated zucchini.
  • Add flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Mix until just combined.
  • Fold in optional walnuts or chocolate chips.
  • Pour batter into the prepared pan and smooth the top.
  • Bake for 45–50 minutes or until a toothpick inserted comes out clean.
  • Cool in pan for 10 minutes, then transfer to a wire rack.
