- Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
- In a large bowl, whisk together mashed banana, applesauce, eggs, yogurt, and vanilla until smooth.
- Stir in grated zucchini.
- Add flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Mix until just combined.
- Fold in optional walnuts or chocolate chips.
- Pour batter into the prepared pan and smooth the top.
- Bake for 45–50 minutes or until a toothpick inserted comes out clean.
- Cool in pan for 10 minutes, then transfer to a wire rack.
