Vegan Baked Feta Pasta

This Vegan Baked Feta Pasta is a creamy, plant-based twist on the viral classic. Made with vegan feta, cherry tomatoes, garlic, and pasta, it’s an easy one-pan recipe perfect for weeknights.

Ingredients
  

  • 1 block vegan feta approx. 200g, such as Violife
  • 2 cups cherry tomatoes
  • 3 –4 garlic cloves peeled
  • 3 tbsp olive oil
  • Salt and black pepper to taste
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes optional
  • 8 oz pasta penne, fusilli, or gluten-free
  • Fresh basil for garnish

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Place vegan feta in the center of a baking dish. Add cherry tomatoes and garlic around it.
  3. Drizzle everything with olive oil and sprinkle with salt, pepper, oregano, and red pepper flakes.
  4. Bake for 30–35 minutes, or until tomatoes are bursting and feta is soft.
  5. Meanwhile, cook pasta according to package instructions. Drain and set aside.
  6. Remove baking dish from oven. Mash tomatoes, garlic, and feta into a creamy sauce.
  7. Add cooked pasta into the dish and toss to combine.
  8. Garnish with fresh basil and serve warm.

Notes

You can stir in spinach or kale right after mixing the pasta for added greens.
For protein, add cooked chickpeas or lentils before serving.
Store leftovers in the fridge for up to 3 days.
