Method
- Drain and shred the jackfruit. Remove seeds and hard core pieces.
- Heat olive oil in a skillet. Sauté onion for 4–5 minutes until translucent.
- Add garlic and tomato paste. Cook for 1 minute.
- Add jackfruit, paprika, cumin, salt, and pepper. Sauté for 10 minutes.
- Pour in BBQ sauce and simmer uncovered for 10–15 minutes until thickened.
- In a bowl, mix shredded cabbage, carrots, vegan mayo, vinegar, maple syrup, salt and pepper.
- Toast slider buns. Assemble by layering jackfruit and coleslaw. Add pickles if desired.
Notes
You can prepare the jackfruit a day in advance. For a gluten-free version, use GF buns. Add jalapeños for heat or fresh herbs for extra flavor.
