Vegan BBQ Jackfruit Sliders

Ingredients
  

  • For the Jackfruit:
  • 2 cans young green jackfruit (in water or brine) drained and shredded
  • 1 tbsp olive oil
  • 1 small onion finely chopped
  • 3 cloves garlic minced
  • 1 tbsp tomato paste
  • 1 tsp smoked paprika
  • 0.5 tsp ground cumin
  • 0.75 cup vegan BBQ sauce
  • to taste salt & black pepper
  • For the Coleslaw:
  • 2 cups shredded cabbage
  • 0.5 cup shredded carrots
  • 0.25 cup vegan mayo
  • 1 tbsp apple cider vinegar
  • 1 tsp maple syrup
  • to taste salt & pepper
  • For Assembly:
  • 6 pieces vegan slider buns
  • pickle slices optional

Method
 

  1. Drain and shred the jackfruit. Remove seeds and hard core pieces.
  2. Heat olive oil in a skillet. Sauté onion for 4–5 minutes until translucent.
  3. Add garlic and tomato paste. Cook for 1 minute.
  4. Add jackfruit, paprika, cumin, salt, and pepper. Sauté for 10 minutes.
  5. Pour in BBQ sauce and simmer uncovered for 10–15 minutes until thickened.
  6. In a bowl, mix shredded cabbage, carrots, vegan mayo, vinegar, maple syrup, salt and pepper.
  7. Toast slider buns. Assemble by layering jackfruit and coleslaw. Add pickles if desired.

Notes

You can prepare the jackfruit a day in advance. For a gluten-free version, use GF buns. Add jalapeños for heat or fresh herbs for extra flavor.
