Method
- Prepare the Vegan Bacon:
- Cook the vegan bacon according to package instructions or your favorite homemade recipe until crispy.
- Toast the Bread:
- Lightly toast the slices of bread until golden and crunchy.
- Assemble the Sandwich:
- Spread vegan mayo on one side of each bread slice.
- On four slices, layer lettuce, tomato slices, avocado, and 2 strips of vegan bacon.
- Season:
- Sprinkle with a pinch of salt and black pepper. Add optional toppings like red onion or hot sauce.
- Top & Serve:
- Place the other slices of bread on top to close the sandwiches. Cut in half and enjoy!
Notes
Use tempeh bacon, coconut bacon, or rice paper bacon for a homemade vegan bacon option. Add a touch of lemon juice on avocado to prevent browning. Great when served with sweet potato fries or a side salad.
