This Vegan BLAT is a fresh, plant-based twist on the classic BLT sandwich. Made with crispy vegan bacon, creamy avocado, ripe tomatoes, and crunchy lettuce all stacked between toasted bread – it’s simple, satisfying, and full of flavor. Perfect for a quick lunch or light dinner!

Ingredients
  

  • 8 slices of whole grain or sourdough bread toasted
  • 1 large avocado sliced
  • 1 –2 large tomatoes sliced
  • 4 large romaine lettuce leaves
  • 8 strips of vegan bacon store-bought or homemade
  • 2 tbsp vegan mayo
  • Salt and pepper to taste
  • Optional: red onion slices fresh basil, hot sauce

Method
 

  1. Prepare the Vegan Bacon:
  2. Cook the vegan bacon according to package instructions or your favorite homemade recipe until crispy.
  3. Toast the Bread:
  4. Lightly toast the slices of bread until golden and crunchy.
  5. Assemble the Sandwich:
  6. Spread vegan mayo on one side of each bread slice.
  7. On four slices, layer lettuce, tomato slices, avocado, and 2 strips of vegan bacon.
  8. Season:
  9. Sprinkle with a pinch of salt and black pepper. Add optional toppings like red onion or hot sauce.
  10. Top & Serve:
  11. Place the other slices of bread on top to close the sandwiches. Cut in half and enjoy!

Notes

Use tempeh bacon, coconut bacon, or rice paper bacon for a homemade vegan bacon option. Add a touch of lemon juice on avocado to prevent browning. Great when served with sweet potato fries or a side salad.
