Ingredients
  

  • 1 cup rolled oats
  • 1/2 cup almond butter or peanut butter
  • 1/4 cup maple syrup
  • 1 tbsp matcha powder culinary grade
  • 1/2 tsp vanilla extract
  • Pinch of sea salt
  • 2 tbsp shredded coconut optional
  • 1 –2 tbsp plant-based milk as needed for texture
  • Optional: 1 tbsp chia seeds hemp seeds, or mini vegan chocolate chips

Method
 

  1. In a bowl, mix oats, matcha powder, salt, and shredded coconut (if using).
  2. Add almond butter, maple syrup, and vanilla extract. Stir until well combined.
  3. If mixture is too dry, add plant milk 1 tbsp at a time until it sticks together.
  4. Scoop and roll into 12–16 balls.
  5. Chill in the refrigerator for 20–30 minutes before serving.
  6. Store in an airtight container in the fridge for up to 1 week or freeze for longer.

Notes

Use almond flour for nut-free version. Add 1 tbsp protein powder for extra boost. Stays fresh for 2 weeks!
