Vegan Pizza Beans

A hearty, protein-packed twist on pizza night! Smoky white beans simmered in a rich tomato sauce with Italian herbs, topped with melty vegan cheese. Serve with crusty bread or over pasta.

Ingredients
  

  • For the Beans:
  • 2 cans cannellini beans drained and rinsed
  • 1 tbsp olive oil
  • 4 cloves garlic minced
  • 1 can crushed tomatoes 28 oz
  • 1 tsp oregano
  • 1 tsp smoked paprika
  • For Topping:
  • 1 cup vegan mozzarella shreds
  • fresh basil for garnish

Method
 

  1. Heat olive oil in a skillet. Sauté garlic until fragrant (1-2 mins).
  2. Add crushed tomatoes, oregano, smoked paprika, salt, and pepper. Simmer 10 mins.
  3. Stir in beans. Cook 10-12 mins until thickened.
  4. Top with vegan cheese. Broil 2-3 mins until melted.
  5. Garnish with basil. Serve hot with garlic bread!

Notes

Use kidney beans for variation. Add red pepper flakes for heat. Leftovers freeze well!
