Method
- Heat olive oil in a skillet. Sauté garlic until fragrant (1-2 mins).
- Add crushed tomatoes, oregano, smoked paprika, salt, and pepper. Simmer 10 mins.
- Stir in beans. Cook 10-12 mins until thickened.
- Top with vegan cheese. Broil 2-3 mins until melted.
- Garnish with basil. Serve hot with garlic bread!
Notes
Use kidney beans for variation. Add red pepper flakes for heat. Leftovers freeze well!
