Ingredients
  

  • 2 cups rolled oats
  • 0.5 cup vegan protein powder
  • 0.5 cup natural almond or peanut butter
  • 0.25 cup maple syrup
  • 2 tbsp chia seeds
  • 1 tsp vanilla extract
  • 1 pinch salt
  • 2 tbsp plant-based milk as needed
  • 0.33 cup vegan chocolate chips or dried fruit optional
  • 1 tbsp coconut oil optional for firmer texture

Method
 

  1. Combine oats, protein powder, chia seeds, and salt in a large bowl.
  2. Warm nut butter and maple syrup until smooth. Stir in vanilla.
  3. Mix wet into dry ingredients. Add plant milk if mixture is too dry.
  4. Fold in chocolate chips, dried fruit, or other optional mix-ins.
  5. Press mixture firmly into a parchment-lined 8x8 pan.
  6. Refrigerate for at least 1 hour or freeze for 30 minutes.
  7. Remove, slice into bars, and store in an airtight container.

Notes

Store in fridge up to 1 week or freeze up to 3 months. Customize with coconut, nuts, or different protein flavors. To make nut-free, use sunflower seed butter instead.
