Method
- Lay each tortilla flat on a clean surface.
- Spread about 2–3 tbsp of hummus across the center of each tortilla.
- Layer with spinach, red cabbage, bell peppers, carrots, cucumber, and avocado.
- Sprinkle with lemon juice, salt, and pepper.
- Carefully fold in the sides and roll tightly like a burrito.
- Slice each wrap in half and serve immediately, or wrap in foil for later.
Notes
Use store-bought hummus or homemade for a fresher flavor.
Optional additions: roasted chickpeas, pickled onions, or hot sauce for spice.
To keep wraps from getting soggy, pat veggies dry and assemble right before eating if storing.
Great for meal prep: wrap tightly in parchment or foil and refrigerate for up to 24 hours.
