Watermelon Feta Mint Salad

Ingredients
  

  • For the Salad:
  • 4 cups seedless watermelon cubed (1-inch pieces)
  • 1 cup vegan feta cheese crumbled
  • 0.5 cup fresh mint leaves thinly sliced
  • 0.25 cup red onion thinly sliced
  • 1 cucumber diced
  • For the Dressing:
  • 3 tbsp extra virgin olive oil
  • 2 tbsp lime juice
  • 1 tsp lime zest
  • 1 tsp maple syrup
  • 0.25 tsp sea salt
  • 0.25 tsp black pepper
  • For Garnish:
  • 2 tbsp toasted pumpkin seeds
  • fresh mint sprigs for serving

Method
 

  1. Prepare watermelon: Cut into 1-inch cubes, removing any seeds. Place in large bowl.
  2. Add diced cucumber, sliced red onion, and most of the mint leaves (reserve some for garnish).
  3. Make dressing: In small bowl, whisk together olive oil, lime juice, lime zest, maple syrup, salt and pepper.
  4. Gently toss salad with dressing until evenly coated.
  5. Add vegan feta crumbles and gently mix (don't over-stir to keep feta intact).
  6. Transfer to serving platter. Garnish with toasted pumpkin seeds, remaining mint leaves, and fresh mint sprigs.
  7. Serve immediately or chill up to 1 hour before serving.

Notes

For best flavor: Salt watermelon cubes lightly 10 mins before assembling. Nut-free option: Use sunflower seeds instead of pumpkin seeds. Don't make more than 2 hours ahead as watermelon releases water. Vegan feta brands: Violife or Follow Your Heart work best.
