Method
- Prepare watermelon: Cut into 1-inch cubes, removing any seeds. Place in large bowl.
- Add diced cucumber, sliced red onion, and most of the mint leaves (reserve some for garnish).
- Make dressing: In small bowl, whisk together olive oil, lime juice, lime zest, maple syrup, salt and pepper.
- Gently toss salad with dressing until evenly coated.
- Add vegan feta crumbles and gently mix (don't over-stir to keep feta intact).
- Transfer to serving platter. Garnish with toasted pumpkin seeds, remaining mint leaves, and fresh mint sprigs.
- Serve immediately or chill up to 1 hour before serving.
Notes
For best flavor: Salt watermelon cubes lightly 10 mins before assembling. Nut-free option: Use sunflower seeds instead of pumpkin seeds. Don't make more than 2 hours ahead as watermelon releases water. Vegan feta brands: Violife or Follow Your Heart work best.
